How to Make Tomato Sauce Out of Fresh tomatoes

There are probably as many methods of making tomato sauce as there are cooks. The key is in the ingredients being used. Fresh tomatoes are clearly superior to canned tomatoes or those on a grocery store shelf.

If you are not growing the tomatoes in your garden, then make sure to contact the farm before you go. There are many conditions that can affect both the crop and the picking hours.
The easiest method is to take the fresh tomato and dunk it in boiling water for ten seconds. After that you immediately stick it in cold water. This will loosen the skin for easy peeling. Place the tomato in a pan and slowly simmer. Add basil to the simmering tomato. Let tomato cook slowly, as long as you want. The consistency can be varied by adding water or tomato juice.

Additional spices can then be added as the tomato simmers.
A more involved method is to place the tomatoes in a pot mixed with water or tomato juice. Bring the contents to a boil. This will sterilize everything. The skins should be removed as they become tough when cooked. Cut the tomato into quarters and remove the seeds and excess water. Put the tomatoes into a drainer. Save the liquid for fresh tomato juice.

Bring the sauce to a simmer until the sauce reaches the desired consistency. You can add some lemon juice as tomatoes are a low acid fruit. Do not add meat to the tomato sauce as the simmering temperature would not kill the type of bacteria that can attack meats. You can obtain home canning kits so that you can make your sauce in quantity and preserve the sauce for months.
