How to Use All Those Tomatoes

So you've grown tomatoes all summer and now you have so many you don't know what to do with them all. Well, just stop and think for a minute. There are a lot of ways to use tomatoes. You can check out some recipes online or you can even check some of your old recipe books. We all know you can freeze them in baggies or can them in jars. You could even make a sauce and can it for pasta instead of buying it from the store. You could even use them in a stir fry or an omelet.

You could make tomato juice for a party instead of having soda. You may also have a Bloody Mary Salsa for a dip. These two are real big at any party. Have you ever tried slow roasted tomatoes? They are delicious and all you have to do is roast it over an open grill and add your favorite spices. Here is one that everyone will love: the mock pizza. It is a grilled cheese sandwich with tomato on it or you could put it in the oven instead of the frying pan. Then there is the plain old fashioned toasted tomato sandwich. Yum! Where's the toast?

The salads you can make are too numerous to mention. Not only can you use lettuce but pasta as well. There are tomato salads that go with cucumbers and other vegetables. You just pick the vegetable you like the best and add the tomato or put them all together.
