You can make your own tomato sauce several different ways. The way you grandmother used to, completely from scratch, is a simple way using items bought at the store. You could look for a recipe online. Of course making it from scratch, and using strictly organic ingredients would be more expensive and might take longer, but it would be totally worth it.
If making it from scratch, you will need fresh tomatoes from the store or you garden. If you are buying them from a store, it is best to buy them from a fruit and vegetable stand, or a farmers market. They will be fresher there, and more likely to be organic. You could even ask the farmer how they were grown.
Once you have your tomatoes and have washed them, you will want to parboil them to loosen the skins for peeling. Peel them and then put them back in the pot, with clean water of course, bring them to a boil, and add whatever spices you want. Garlic, onion, salt, pepper, thyme, oregano, or bay leaf are some tried and true favorites. Make sure to add a little vinegar or lemon juice to kill any bacteria or spores. Boil everything until the tomatoes are well cooked. Let cool and then put in a blender or food processor to liquefy. Let sit and you have your tomato sauce.
If you are using canned goods items from the store, you won’t have to parboil and peel. Just add the canned tomatoes and your other ingredients, cook until done and then puree or liquefy. If you are using tomato paste, add one can of water per can of paste. Cook until all ingredients are mixed thoroughly.
