Freezing Your Tomatoes

At the end of summer, freezing your tomatoes is fast, easy, and one of the best ways to enjoy a tomato in the long winter months. They say you will find it much easier to save those tomatoes by the freezing method than the canning method. When canning, you set aside a whole day of chopping, cooking, and warming jars to keep those tomatoes for the cold months. When you freeze your tomatoes, the steps are fast and easy.

It is said that if you just simply chop your tomatoes in quarters and freeze them in a freezer safe bag, they are great for salads if eaten immediately after pulling them out of the freezer. Waiting too long after pulling them out of the freezer will cause the tomato to turn mushy. If you chop the tomatoes up, also placing them in a freezer safe bag, along with the tomatoes juice, they are great in soups, spaghetti, stews, etc. They recommend that the proper container for freezing tomatoes is freezer safe bags because frozen tomatoes in a jar would be very difficult for anyone to get out.

After freezing tomatoes as a whole, it is said that you can then take the tomatoes out of the freezer when ready and then can the tomatoes. Place the tomato in a pot of boiling water for 45 second to allow the peel to be removed easier. Then you are ready to can those tomatoes. The tomatoes are best if used within eight months after first freezing them.
