The Basics of Canning Tomatoes

Let's get started. You'll need the following equipment: two large pots, one medium pot, two large bowls, a jar lifter, a funnel, some jars, lids, rings, and tongs. First, wash the tomatoes. Peeling the tomato is easy if you put them in boiling water, then, right away, put them in a bowl of ice water. The skin will come off easily. Dice the tomatoes and put them along with the ingredients from a recipe into a pot to cook. At the same time, put the jars into a pot of boiling water to sanitize them. Lay a towel out and put the jars on the towel with the lifter. Put the funnel into the jar and pour the tomatoes in. Take a knife and run it around the inside edges to get the air bubbles out. Heat the lids and clean the top rim of the jar, placing the lid and ring on the jar, and tightening the ring. Put the jars into boiling water for 45 to 50 minutes. Take the jars out and place them on a towel to cool. Leave space between the jars.

That's it. Once they are cooled, you are done. This is really an easy process, especially if you get everything you need together first. Have fun and happy canning!
